Cheezy Kale Chips

Kale chips are one of my favorite snacks (crunchy, salty things FTW!). While I do enjoy the convenience of store-bought chips, they can be quite expensive, and I tend to get sick of their flavors easily.

Enter: homemade kale chips.

When making kale chips at home, we have endless flavor varieties, and the final result tends to be lighter and crispier then store-bought versions.

While kale chips can be made with just olive oil and a bit of salt (if even that), I take it up a notch in this recipe.

I developed this recipe after coming across the most delightful bag of kale chips during a work trip in Italy. When I came home, I tried tons of variations in an attempt to recreate the wonder of those Italian kale chips, and the recipe presented here comes pretty darn close.

Cheezy Kale Chips

Vegan, cheezy, homemade kale chips

  • 1 large bunch kale (rinsed and dried)
  • 1 tbsp extra virgin olive oil
  • 1/4 cup nutritional yeast
  • 1 tbsp sunflower seed butter (or 2 tbsp seeds of choice, ground)
  1. Preheat oven to 350 degrees.

  2. Mix all ingredients, except kale, in a large bowl.

  3. Add kale leaves, and massage with sauce.

  4. Spread leaves over a baking sheet, lined with parchment paper, in 1 layer (no overlap!).

  5. Bake for 10-15 minutes, or until crisp. Kale leaves burn quickly, so keep a close eye on them!
