Pumpkin Pasta Sauce
Aside from something store-bought, this is probably the easiest pasta sauce you’ll ever make. If you’re craving something rich, creamy, and fall-inspired (and healthy!), give this recipe a try.
Easiest Pumpkin Pasta Sauce
A ridiculously easy pasta sauce for fall-inspired dinners.
- 1 can pumpkin puree
- 1 can coconut milk* (lite**)
- Spices, as desired (garlic powder, onion powder, paprika)
- Salt, to taste
Pour pumpkin puree and coconut milk into a saucepan, and heat until warmed through. Add spices and salt if desired.
Serve over your favorite whole-grain pasta.***
*If you don’t like coconut milk, you can use a nut-based milk instead. The higher the fat content, the tastier it will be (I would recommend cashew milk — 1/4c cashews and 1c water blended in a high-powered blender until smooth).
**Feel free to choose full-fat coconut milk if you want a richer flavor and creamier texture.
