I love smoothies, but it’s easy to get stuck in a rut — I tend to have the same type of smoothie each time. Even if you don’t get bored easily eating the same foods, switching things up is important from a nutritional perspective — eating different foods ensures you’re consuming a broad range of nutrients.
This particular recipe is a great way to switch things up. And if you make this in the fall, you’ll be taking advantage of seasonal produce and the flavors of autumn.
- 1 cup water or plant-based milk
- 1/2 cup pumpkin puree
- 1 medjool date, pitted
- 1/4 cup vanilla protein powder
- 2 tbsp raw cashews
- 1/2 tsp pumpkin pie spice
- Blend all ingredients in a high-powered blender until smooth.
